Hi,
Check out Dr. Nicola Talbot's guide for writing PhD thesis in LaTeX:

A search in google will provide you various class files for PhD theses
(university pages and personal pages). From my own experience, it is
easier to choose one that closely matches your university's
requirements and modify that to your need, instead of writing one from
scratch.
