First thing to do is to grab and save the screengrabs initially in a  
format which doesn't lose any data (.bmp, or .png). Never, ever,  
resample the images.

Saving as .eps or .pdf out of Adobe PhotoShop turning on the  
interpolation key will preserve data and allow the renderer to make  
the best possible representation at the output size / resolution. You  
can do this using an action in a batch to avoid tedium. Other tools  
can be used for batch processing, but care must be taken to preclude  
resampling and AFAIK, none offer the option of turning on the  
interpolation key.

If necessary, label using a tool like Illustrator or Freehand which  
will allow one to place the bitmap screengrab, place text and vector  
graphics over it and to output a .eps or .pdf which includes text as  
text, vectors as vectors and bitmaps and only bitmaps as bitmaps.

Alternately, re-draw all screengrabs --- that's what Michael Harvey  
did for his book _Creative Lettering Today_.
