All self-respecting packages come with a manual of some sort, which, for
example, with MiKTeX gets installed in a directory called something like
C:\...\texmf\doc\latex\packagename\.  It may be in dvi, ps or pdf form.  In
the ams case you should find:

C:\...\texmf\doc\ams\amstex\amsguide.ps

Yes, this is a good solution ... if the output format you're using supports
rotation (for example, dvips will).
