[tex-live] MacOS X + CJK

I signed up for TUG to receive the TexLive CD so that I could have a
version of latex that worked with CJK already installed.
Unfortunately, this didn't work:

(1) I have a Mac (i386, 10.4.7) and so I installed MacTex from the
    TexLive 2005 disk.  But after trying it, I discover that MacTex
    doesn't have CJK installed.  Oh well.

(2) Next I tried to use the main TeXLive distribution.
    I installed it (with sudo install-tl.sh) with all
    default options.  Then I sudo'd texconfig (rehash)
    just in case it still needed configuration.

    But then when I run latex or pdflatex on a chinese CJK file,
    I get the output:

After some looking around in ls-R files, I see that my installation
comes with GBK kai *.htf files and NTU sm *.htf files but no .hbf
files (apart from some CNS-40 files) and definitely no NTU kai files.

Why does mktexnam say special.map is out of date?
Did I miss some part of the installation I was supposed to do? 
Do I need to get the NTU kai files from somewhere else?
Can anyone recommend an easy way to get CJK to work on latex on Mac OS X ?
